Brownie Cookies
A reader requested this recipe months ago, and when I discovered
I had an old recipe in my own collection I couldn't believe it! Of course I
had to try them first, and they are delicious!
Ingredients:
2/3 cup butter or vegetable shortening (The shortening will
produce a thicker more "brownie like" cookie - that's what I used
when testing the recipe and they turned out great!)
1 1/2 c. light brown sugar, packed
1 T. water
1 tsp. vanilla extract
2 large eggs
1 1/2 c. all-purpose flour
1/3 c. unsweetened cocoa powder
1/4 tsp. baking soda
1/2 tsp. salt
1 (12-ounce) package semi-sweet chocolate chips
Directions:
Preheat oven to 375 degrees, or 350 if your oven runs hot. In
a large mixing bowl, combine shortening, sugar, water and vanilla. Blend
well. Add eggs and beat just until combined. In a separate bowl,
combine flour, cocoa, baking soda and salt. Add dry ingredients to
shortening mixture slowly, on low speed. Add chocolate chips.
Drop dough by rounded tablespoonfuls onto ungreased baking
sheet. Bake for 8-9 minutes or until cookies are set, (they will be
soft, but not gooey). Remove cookies from oven and cool on baking sheet
for a few minutes. Place cookies on cookie racks to finish
cooling. Oh, and by the way, they are soooo good warm!!! :o)

Cream Cheese Crescents
Ingredients:
1 lb. butter
1 lb. cream cheese
4 c. flour
4 egg yolks
Nut Filling (below)
Directions:
Mix all ingredients, except filling, thoroughly for dough. Put in refrigerator overnight. Roll out on powdered sugar board and fill with Nut Filling. Cut in 2 inch squares. Roll up. Bake 20-25 minutes at 350 degrees.
Nut Filling
4 egg whites
1/2 c. sugar
1 lb. ground walnuts
drop of vanilla
Beat whites, add sugar. Beat again. Fold in nuts and vanilla.

Chocolate Chip Cookies
Ingredients:
1c. margarine or shortening (half of each is good too)
1/2 c. white sugar
1 c. brown sugar
2 eggs
2 t. vanilla
2 c. flour
1 t. soda
1 t. salt
1 small pkg. chocolate chips
Directions:
Mix well. Drop on ungreased cookie sheet. Bake at 350 degrees.
Note: My husband prefers these with Peanut Butter Chips. Sometimes I use both Chocolate and Peanut Butter Chips.

Crisp Graham Cookies
Ingredients:
1/2 cup butter-flavored shortening
1/2 cup packed brown sugar
1 egg
1-1/2 teaspoons vanilla extract
1 can (14 ounces) sweetened condensed milk
3 tablespoons creamy peanut butter
1-1/2 cups all-purpose flour
1 cup graham cracker crumbs
1 teaspoon baking soda
1 teaspoon salt
2 cups (1 pound) plain M&Ms
1/2 cup chopped pecans
Directions:
In a mixing bowl, cream shortening and brown sugar; beat in egg. Add vanilla and milk. Blend in peanut butter. Combine dry ingredients; add to the creamed mixture. Stir in the M&Ms and nuts. Drop by teaspoonfuls 1
inch apart on ungreased baking sheets. Bake at 350 degrees for 10-12 minutes or until golden brown. Cool on wire racks. Yield: 7 dozen 2-inch cookies.

Real Dad's Cookies
Ingredients:
1 cup margarine
3/4 cup white sugar
1/2 cup brown sugar
1 egg, well beaten
2 Tbsp molasses
1 tsp vanilla
1 1/2 cups flour
1 1/2 cups rolled oats
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
1 cup medium unsweetened coconut
Directions:
Cream margarine & sugars, molasses, vanilla & egg together.
Add flour, baking powder, baking soda, spices, oats & coconut. Mix well. Form into balls & place 2 inches apart on greased cookie sheet. Do not flatten.
Bake at 325 until golden brown - 10 to 15 minutes. Do not overbake.

Grammy’s Raisin Cookies
Ingredients:
½ c Crisco
½ c butter
1½ c sugar
3 eggs
½ tsp baking soda (dissolved in 2 tsp water)
3 c flour
1 tsp salt
1½ tsp cinnamon
1½ tsp nutmeg
2 c raisins
Directions:
Cream Crisco, butter and sugar together. Add beaten eggs and mix well. Dissolve soda in water and add. Mix and sift flour and spices then add to the creamed mixture.
Add raisins. Drop (Drop, don’t roll) by small tablespoonfuls onto a greased baking sheet (or use parchment paper). Bake at 335º for 12-18 minutes.
Makes 75 or more.
I remember Grammy always poured boiling water over the raisins and let them sit for a few minutes before adding to batter. This helped to plump them up. Be sure to drain well so as not to add extra water to the batter.
Dad says that Grammy also put a dollop of bacon fat in the recipe. She kept the fat in a jar by the stove. Also, don’t handle the dough too much or it will result in a rock hard cookie.

Paradise Nut Bars
Ingredients:
2 sticks butter , room temperature
1 1/2 cups packed brown sugar
2 large eggs, at room temperature
1 tsp pure vanilla extract
1/4 tsp fiori di scilia extract (not sure what this is, experiment with whatever
you have)
2 1/2 cups all purpose flour
1 1/2 tsp baking powder
1 tsp salt
2 cups coarsely chopped white chocolate chunks
1 cup coarsely chopped macadmia nuts
Directions:
Preheat oven to 350 degrees. In a medium sized bowl beat the butter and
sugar at medium speed until creamy and lightened in color, about 4 minutes. Add eggs, one at a time, beating at low speed until combined.
Add vanilla and fiori di scilia flavoring. Add dry ingredients until combined. Fold in white chocolate chunks and nuts. Spread batter into a
9x13" pan in an even layer. Bake at 350 degrees for 22-27 minutes. Let cool for 40 minutes before cutting into squares.
Store in an airtight container at room temperature.

Puffy Chocolate Chip Cookies
Beat together:
1 cup shortening
3/4 cup white sugar
1 cup brown sugar
Add:
2 eggs
1 teaspoon vanilla
Mix in:
2 1/4 cups cake flour
1 teaspoon salt
1 1/2 teaspoon baking powder
Lastly, add:
2 cups chocolate chips
Chill cookie dough for at least 10 minutes. Drop small scoops on baking sheet. Bake for 10 minutes at 350 degrees.

Iced Carrot Cookies
Ingredients:
3/4 c. butter
3/4 c. sugar
1 egg
1 t. vanilla
1 c. cooked mashed carrots
2 c. flour
2 t. baking powder
1 t. salt
Directions:
Cream butter and sugar in a large mixing bowl. Add egg and
vanilla, beat until fluffy. Add carrots. Sift flour, baking powder, and salt, and add to creamed mixture. Drop by tablespoonfuls onto greased cookie sheet. Bake at 375
degrees for 12 minutes; cookies should be baked through, but removed from oven before they begin to brown. Cool, then ice with Orange
Frosting (recipe below).
Orange Frosting
In a small bowl, combine 2 cups powdered sugar, a bit of orange rind, juice from orange (or orange juice from refrigerator),
and a dash of salt. Stir until well mixed.

Peanut Butter Cupcakes (a non-cookie recipe, but one
that we couldn't pass up!)
This is a cupcake recipe that you may like. Prepare a yellow cake mix
according to directions, place about 2/3 filling into cupcake papers, place a miniature peanut butter cup inside, and add the other third
filling. Bake as directed. Cool completely, and add 2-3 tablespoons peanut butter to a can
of creamy white frosting. Quick, and great.

Wedding Cookies
These are very good and easy to make.
Ingredients:
2 sticks margarine
1/2 c. powdered sugar
2 c. all-purpose flour
1-1/2 tsp. vanilla flavoring
1/2 c. chopped nuts
Directions:
Preheat oven to 350 degrees. Mix ingredients together
and blend well. Roll dough into small balls, flatten slightly and bake
on ungreased cookie sheet. Bake until straw colored, about 10-12
minutes. While warm, roll in powdered sugar and roll in powdered sugar
again.

Helen's S Cookies
Ingredients:
3 1/2 cup flour
3 tbsp baking powder
1 tsp baking soda
1 tsp salt
4 large eggs
2 cup sugar
2 tbsp lemon juice
1 tbsp vanilla
1 cup shortening, melted & cooled
Directions:
Blend dry ingredients, set aside. Blend wet ingredients. Blend
dry and wet ingredients together. Makes a stiff dough. Use a pastry bag and form S or 8s on greased baking
sheet, place a fair distance apart as these spread. Bake at 350 degrees for 10-12 minutes.

Potato Chip Cookies
Ingredients:
1 lb. (4 sticks) butter
1 cup sugar
3 1/4 cup flour
1 tsp. vanilla
1 1/2 cup coarsely crushed potato chips
Powdered sugar
Directions:
Cream butter and sugar. Slowly blend in flour and vanilla. Gently
mix in potato chips. Preheat oven to 300 degrees. Drop dough by well
rounded teaspoons onto cookie sheet; lightly flatten with fork. Bake
15-20 minutes, until just barely browned. Cool and sprinkle with powdered
sugar. Makes 5 to 6 dozen.

Cinnamon Crisp Cookies

1 1/2 tablespoons molasses
Stir in.................2 1/4 cups flour

Thin Mint Cookies
I have a Thin Mint cookie recipe that uses Chocolate Bark. It is very simple!
6 oz Chocolate Almond Bark
12 drops peppermint extract
36 Ritz crackers
Melt almond bark in double broiler (or microwave). Add peppermint to taste. Dip Ritz
crackers in chocolate and place on waxed paper to harden.

Body Builder Cookies
Ingredients:

3 cups flaked bran cereal, crushed
1/2 cup raisins
1/2 cup pecans or walnuts, chopped
Directions:
Beat butter and sugar together until fluffy, add egg and
vanilla and blend well. In a separate bowl, stir together dry
ingredients and add to butter mixture until combined well. Stir in
crushed cereal, raisins and nuts. Form cookie balls with a tablespoon
and place on an ungreased baking sheet. Bake at 350 degrees for 15
minutes or until lightly browned. Cool on racks.
