Valentine's Day Cut Outs
Make your favorite sugar cookie recipe. Cut out shapes with Alphabet cookie cutters, using the letters L, O, V, E. Frost with pink, red or white icing. We call these "love letters" at our house and the grandchildren look forward to them for Valentines. Be sure each
package contains enough cookies of each letter to spell LOVE!

Aunt Marilyn's Rolled Sugar Cookies
Ingredients:
1-1/2 c. powdered sugar
1 c. butter, softened
1 egg
1/2 tsp. almond extract
1 tsp. vanilla extract
2-1/2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar
Directions:
Blend
sugar and butter, add egg and extracts. In another bowl, combine dry
ingredients, then mix into butter mixture. Cover dough and chill for 2
hours. Roll 1/4-inch thick and use cookie cutters. Bake at 375
degrees for 7-8 minutes.

Magic Nanaimo Bars
Ingredients:
1/2 c. butter
1/4 c. brown sugar
1/4 c. cocoa
1 egg, beaten
2 c. graham wafer crumbs
1 c. coconut, flaked or shredded
1/2 c. chopped walnuts or pecans, or peanuts
1 can sweetened condensed milk
1/3 c. lemon juice
1/3 c. melted semi-sweet chocolate chips
Directions:
Melt butter and stir in sugar, cocoa, egg, crumbs,
coconut and nuts. Press into bottom of a 9x9-inch pan. Combine sweetened condensed milk with lemon juice.
Blend well and spread onto base. Drizzle with melted chocolate chips OR sprinkle with
toasted almonds or pistachios. Refrigerate until firm, about 2 hours. Makes 3 dozen bars.

Helen's Haselnuss Halbmonde
Ingredients:
1/2 lb butter
2 c. flour
1/2 lb ground filberts
1/8 c. cold water
1 c. sugar
1/2 c. icing sugar
Directions:
Mix all ingredients together. Form into small crescents. Bake for approx 10
min at 300 degrees. Cookies should not brown. (Dough may be frozen.) To
finish, cookies may be dipped in icing sugar, or chocolate or as desired.

Coconut Crunch
This is one of my favourite recipes.
Ingredients:
230g butter (about 9 T.)
1/4 tsp. salt
220g. sugar (1/2 c.)
1 egg
50g. shredded coconut (2 ounces)
250g. flour, sifted (9 ounces)
2 tsp. baking powder
additional coconut for coating
Directions:
Cream butter, salt and sugar until smooth. Add egg and
blend until light in color. Add in coconut, then sifted flour. Mix
well. Shape dough into balls and roll in additional coconut, coating
evenly. Place cookies onto greased
pan and press them slightly. Bake at 175 degrees for 20 minutes.

Editor's Note... Even though complete standard measurements
were not included with this recipe submission, I looked them up on our conversion
chart and did the best I could. I just feel it's a recipe worth
trying! :o)
Peanut Butter Cookies
Ingredients:
1 c. vegetable shortening
1 c. granulated sugar
1 c. brown sugar
2 whole eggs
1 tsp. vanilla
1 c. peanut butter
2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
Directions:
Cream shortening, sugars, egg and vanilla, stir
in peanut butter. Sift all dry ingredients together. Stir into creamed
mixture. Shape about one teaspoon of dough into ball. Place on ungreased
cookie sheet. Press dough with floured fork to make crisscross mark. Bake at
350 degrees for about 10 minutes. Cookies burn easily. Makes about 5 dozen,
depending on size you make.

Healthy Power Bars
Ingredients:
1 c. raisins
1 c. light corn syrup (or honey)
1/2 c. packed brown sugar
1/4 tsp. salt
1/2 c. natural peanut butter, chunky style
1 tsp. vanilla
1 c. nonfat dry milk
1 c. low fat granola cereal (crush large lumps)
1 c. whole bran cereal (Grape Nuts or All Bran)
6 ounces chocolate pieces (optional)
Directions:
Line a 9 x 13 inch pan with waxed paper. Microwave syrup, sugar and salt to a boil. Stir in everything else except chocolate until it cools a bit. Press into pan. Refrigerate 30 minutes or longer, then cut into one-inch squares. Place 3-4 squares in sandwich baggies, then put all the baggies in a gallon sized baggie. Store in the refrigerator, or freeze.

Oatmeal & Raisin Cookies
Ingredients:
1/2 c. shortening
1 c. sugar
1 egg
1/2 c. evaporated milk
1 c. uncooked oatmeal
1 1/2 c. sifted flour
1/2 tsp. salt
1 tsp. cinnamon
1 cup raisins
Directions:
In a large bowl, cream shortening and sugar together until light
and fluffy. Add the egg, cream well, then stir in the milk and oatmeal. In a
separate bowl, stir the flour, salt, cinnamon, and baking powder together and
add into the oatmeal mixture. Drop dough from a tsp. onto a greased baking sheet
and bake at 375 degrees for about 15
minutes. Makes about 4 dozen cookies.

Vacuum Cleaner Cookie Bars
Ingredients:
1/2 c. margarine
1 box yellow cake mix
3 eggs
1- 8oz cream cheese
1 lb confectioner's sugar
1/2 c. coconut
1/2 c. nuts
Directions:
Combine margarine, cake mix and one egg. Stir well. Pat into bottom of 15x10 pan. Beat the remaining two eggs. Beat in the cream cheese & the
package of confectioner's sugar. Stir in the coconut & nuts. Pour over the ingredients in the cake pan. Bake
at 325 degrees for 45 minutes. When cool cut into bars.

Cookies
1/2 c. margarine or
butter
1/4 c. brown sugar
1 egg, separated
1 tsp. vanilla extract
1 c. flour
1 c. chopped pecans
1/4 tsp. salt
Heat oven to 350 degrees.
Mix margarine, sugar, egg yolks and vanilla. Blend together flour, salt
and stir. Roll dough into balls, 1 tsp. per ball. Beat egg
whites until stiff. Dip balls into egg white, roll in nuts. Place
cookies about 1 inch apart on ungreased cookie sheet. Press thumb
gently in center of each cookie and fill with different kinds of jelly. Bake
10 to 12 minutes, then cool.

Fat-Free Lemon Cookies
Ingredients:
One box of dry Lemon Cake mix, I like Pillsbury
1 egg
2 c. Fat-Free Cool Whip
Powdered sugar
Directions:
Put dry cake mix in bowl., add 1 egg, stir up well. Add 2 cups
of cool whip. Form teaspoonfuls of dough into balls and roll each one in
powdered sugar. Place cookies on a lightly greased (with Pam fat-free cooking
spray) cookie sheet. Lightly press cookies down a bit. Bake 12 to 15 minutes
at 350 degrees or until done, and not brown on top. Remove from cookie
sheet and cool.
2 cookies are 3 points in Weight Watchers

Surprise Marcus Gourmet Cookies
Ingredients:
2 c. butter
24 oz. chocolate chips
4 c. flour
2 c. brown sugar
2 tsp. soda
1 tsp. salt
2 c. sugar
1x8 oz. Hershey Bar (grated)
5 c. blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 c. chopped nuts (your choice)
Directions:
Blend oatmeal in blender to a fine powder. Cream butter and sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda.
Add chocolate chips, Hershey Bar, and nuts. Roll dough into balls, and place two inches apart on an
ungreased cookie sheet. Bake for 10 minutes at 375 degrees. Makes about 112 cookies.
