Benne (Sesame Seed) Cookies - Recipe 1 of 2

These cookies are an old Southern favorite, and sesame seeds are called "Benne seeds" in the South.

Ingredients:

1-1/4 c. all-purpose flour
1/4 tsp. baking powder
1/4 tsp. salt
3/4 c. butter, softened
1-1/2 c. light-brown sugar, firmly packed
2 large eggs
1 tsp. vanilla extract
1/2 c. sesame seeds, toasted

Directions:

In a small bowl, combine flour, baking powder & salt, set aside. In large bowl, cream butter & sugar; beat in eggs & vanilla extract. Gradually blend in dry ingredients. Fold in sesame seeds. Drop dough by spoonfuls 2 inches apart onto lightly greased baking sheets. Bake at 350 degrees for 10-12 minutes, will be lightly colored. Cool on wire racks.  Makes about 3-4 dozen cookies.

Benne (Sesame Seed) Refrigerator Cookies - Recipe 2

Ingredients:

2 c. all purpose flour
1/4 tsp. salt
1/2 c. butter, softened
1 c. granulated sugar
1 large egg
1/4 c. milk
7-1/2 T. sesame seeds, toasted

Directions:

In a small bowl, combine flour and salt, set aside. In large bowl, cream butter & sugar. Beat in egg and milk. Gradually blend in dry ingredients. Fold in sesame seeds. Form dough into 1" thick log. Wrap in waxed paper; chill at least 8 hrs.

Preheat oven to 375 degrees and lightly grease 2 baking sheets. Slice log into 1/4" thick slices.  Place cookies 2 inches apart on prepared baking sheets. Bake for 10-12 minutes, will be lightly colored. Cool on wire racks.

Cake Crumb Cookies - Recipe 1 of 3

Ingredients:

1 c. shortening
1 c. sugar
2 eggs
3 c. cake crumbs, ground fine
1/2 tsp. baking soda
dash of salt
2 c. oatmeal
1 tsp. vanilla extract

Directions:

Mix ingredients in order given. Drop by teaspoonfuls onto ungreased cookie sheet. Bake 8-10 minutes at 350 degrees.

Cake Crumb Cookies - Recipe 2

Ingredients:

2 eggs
1 c. milk
5-7 c. cake crumbs
2/3 c. brown sugar
1/2 c. melted margarine
1 tsp. vanilla
1 3/4 c. flour
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
pinch ground cloves
2 c. quick oatmeal
1/2 c. chopped walnuts

Directions:

Beat eggs and milk, add cake crumbs and let stand 15 minutes. Blend in sugar, margarine and vanilla. Sift together flour, soda, baking powder, salt, and spices and add to sugar mixture. Fold in remaining ingredients. Drop 2" apart on greased cookie sheets. Bake for 10 minutes at 350 degrees.

Spice Cookies (with 3 variations) - Recipe 3

Ingredients:

3 1/2 c. white or yellow cake crumbs
1/2 tsp. baking powder
1/2 c. Shortening
1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. allspice
4 egg yolks
6 T. cold water
1 tsp. vanilla
1 c. raisins
1 c. chopped nuts

Directions:

Place cake crumbs in mixing bowl and beat until fine. Add remaining ingredients except nuts and raisins, and beat well. Stir in nuts and raisins and drop by heaping teaspoonfuls onto greased cookie sheet. Bake at 350 degrees for 10 - 12 minutes, or until golden brown. Add more cake crumbs if too thin. Makes about five dozen cookies.

Variations: For Chocolate Chip Cookies omit raisins and spices and add 12 oz. chocolate chips. (1/2 c. cocoa may also be added if desired). For Chocolate Drop Cookies use chocolate cake crumbs, omit raisins and spices and add 1/2 c. cocoa. For Coconut Drop Cookies omit spices, raisins, and nuts and add 1 c. shredded coconut.

Pumpkin Spritz Cookies

Ingredients:

1 c. butter
1/2 c. sugar
3/4 tsp. baking powder
3/4 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/3 c. canned pumpkin
1 egg
1 tsp. vanilla
2 3/4 c. flour
ground nutmeg

Directions:

Cream butter; add sugar and spices. Beat till combined. Beat in pumpkin, egg and vanilla until combined. Beat in flour. Do not chill. Use cookie press and sprinkle nutmeg on top. Bake at 400 degrees for 6 to 8 minutes.

Oreo Cookie Recipes

Cookies and Cream Truffles - Recipe 1 of 6

Ingredients:

1 c. finely ground Oreo Cookies
12 T. melted butter, divided
6 ounces white chocolate, broken into small pieces
5 large egg yolks
1-1/4 c. confectioners' sugar
1 tsp. pure vanilla extract

Directions:

In food processor, chop cookies until finely chopped. Slowly drizzle in 6 T. melted butter; process until well mixed, set aside.

In small saucepan, heat remaining 6 T. butter until very hot & bubbly, being careful not to let it burn. Remove from heat; add white chocolate. Stir constantly until smooth & melted; set aside.

In large bowl, beat egg yolks until foamy. Gradually beat in sugar; add vanilla; continue to beat until thick. With mixer on slow to med speed, gradually beat in cookie mixture, then gradually beat in melted chocolate mixture. Beat until smooth & well mixed. Cover with plastic wrap; refrigerate at least 30 minutes or until firm.

In bowl, place your choice of coating. If you're going to have more than 1, use separate bowls. Some possible coating choices are: toasted coconut, chopped nuts, unsweetened cocoa powder, crushed Oreo cookies.

Scoop out teaspoonful of the truffle mixture; using your fingers, roll into a ball. Working quickly as the heat of your hands will quickly start melted chocolate. Drop ball in coating bowl. Repeat process until there are 4 or 5 balls in coating bowl. Gently roll truffles in coating mixture; place on sheet of waxed paper.

Wrap truffles in an airtight container; store in refrigerator up to 10 days or in freezer up to 1 month.

Makes about 40 cookies.  (Please note: This recipe calls for raw eggs!)

Oreo Truffles - Recipe 2

Ingredients:

1 pkg. Oreo Cookies
1 pkg. cream cheese, softened
1 Ghiradelli white chocolate dipping bar

Directions: 

Using food processor, crush Oreo cookies. After bringing cream cheese to room temp to soften, mix in with crushed Oreo's. Mixture will be crumbly. Roll into small balls. Then dip each ball into white chocolate; store in freezer. Serve directly from freezer or refrigerator. This is great to make ahead & store in refrigerator.  Makes about 48 cookies.

Oreo Balls - Recipe 3

Ingredients:

1 8-ounce pkg. cream cheese, softened
4 c. crushed chocolate sandwich cookies (such as Oreo's)
2 c. vanilla or chocolate baking chips
1 T. shortening

Directions:

On high speed of electric mixer, beat cream cheese until light & fluffy. Add cookies; beat until well combined. Refrigerate 2 hrs until chilled enough to roll. Roll dough into 1" balls. Over double boiler, melt chips & shortening until smooth. Dip balls into mixture; thoroughly coat. Place on waxed paper to harden. Store in refrigerator. Makes about 2-1/2 dozen cookies.

Oreo Snowballs - Recipe 4

Ingredients:

1 pkg. Oreo cookies
1 8-ounce pkg. cream cheese, softened
white chocolate almond bark
miniature candy canes

Directions:

Crush Oreo's & candy canes separately; set candy canes aside. Combine Oreo's & softened cream cheese. Form into 1" balls; place on cookie sheet covered with waxed paper. Chill 10 minutes. Meanwhile - In med bowl, melt almond bark. Dip Oreo balls into melted almond bars; place back on waxed paper. Sprinkle with crushed candy canes. They set up within a few minutes, so dip 2-3 at at time and sprinkle before they set up.

Chocolate and Cream Cheese Cookie Balls - Recipe 5

Ingredients:

1 pkg. Oreo's, crushed
1 8-ounce pkg. cream cheese, softened
1 pkg. almond bark, melted

Directions:

In microwave-safe bowl, place almond bark; microwave 2-3 minutes, stirring after each min until smooth. Combine crushed Oreo's & cream cheese thoroughly; form into balls; dip into melted almond bark. Cool on waxed paper.

Chocolate Yummy Balls - Recipe 6

Ingredients:

25 Oreo cookies
1 c. chopped nuts
1/2 c. dark Karo Syrup
1/3 c. Creme de Cacao
1 c. powdered sugar

Directions:

In blender or food processor; process cookies until completely chopped. In large bowl, stir together cookies, nuts, Karo & dark or light Creme de Cacao. Form into walnut size balls; roll in powdered sugar. Place on serving dish. Keep in refrigerator until serving time.

Jill's Cowboy Cookies 

Ingredients:

1 c. shortening 
1 c. sugar 
1 tsp. vanilla 
1/2 tsp. baking powder 
6 ounces chocolate chips 
1 c. nuts 
1 c. brown sugar 
2 eggs 
2 c. flour 
1 tsp. soda 
2 c. oats 

Directions:

Mix ingredients as listed and drop on greased cookie sheets. Bade at 350 degrees for 15 minutes or until done. Makes about 5 dozen.
