Giant Chewy Ginger Cookies

Ingredients:

4-1/2 cups flour
4 tsp. ground ginger
2 tsp. baking soda
1-1/2 tsp. ground cinnamon
1 tsp. ground cloves
1/4 tsp. salt
1-1/2 cups shortening*
2 cups granulated sugar
2 eggs
1/2 cup molasses
3/4 cup coarse or granulated sugar

Directions: 

Heat oven to 350 degrees. Stir flour, ginger, baking soda, cinnamon, cloves and salt in medium bowl; set aside.

Beat shortening in a large bowl with electric mixer on medium speed for 30 seconds. Gradually add 2 cups sugar, beating until fluffy. Add eggs and molasses; beat until well blended.

Beat in as much flour mixture as possible with mixer. Stir in any remaining flour mixture with wooden spoon. Shape dough into 2-inch balls with 1/4-cup ice cream scoop. Roll in 3/4-cup sugar.

Place 2-1/2 inches apart on ungreased cookie sheets. Bake 12 to 14 minutes or until lightly browned and puffed. (Do not overbake or cookies will not be chewy.) Cool for 2 minutes; remove from cookie sheets. Cool on wire racks. Makes about 25 cookies.

*Note: to create the chewy texture, be sure to make these cookies with shortening, not butter or margarine.

Ingredients:

3/4 c. shortening
1 c. sugar
1/4 c. molasses
1 egg
2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
1 T. ground ginger
1 tsp. ground cinnamon sugar, for rolling

Directions:

Preheat oven to 350 degrees. In a large mixing bowl place shortening and sugar and cream until light and fluffy. Add molasses and egg, beating well. 

Combine flour, baking soda, salt, and spices and gradually add to shortening mixture, mixing well. Shape dough into 1-inch balls and roll in sugar. 

Place cookies 2 inches apart on ungreased cookie sheets and bake for 12 minutes. Remove from cookie sheets and place on wire racks to cool. Makes 24 cookies.

My kids love these cookies. We make them in the fall, especially around Thanksgiving and Halloween, but they would be just as good on a rainy summer day. Using milk chocolate chips really give them a wonderful flavor with the pumpkin and other spices. They have the same density as hermits and just as good!

Ingredients:

Cookies...

1/2 pound butter (2 sticks)
2 c. brown sugar, packed
1/2 c. white sugar
4 eggs
2 c. mashed cooked pumpkin
1 tsp. vanilla extract
2 c. chocolate chips (milk chocolate)
2 1/2 c. all-purpose flour
1 tsp. salt
2 tsp. baking soda
4 tsp. cinnamon
1/2 -1 tsp. cloves
1 tsp. nutmeg
1 tsp. ginger

Icing... (if desired, they are great with or without)

3 T. confectioners' sugar
1 tsp. hot water (more or less as needed; for desired consistency)

Directions:

Sift together flour, salt, baking soda, cinnamon, cloves, nutmeg, and ginger. Set aside. 

cream together butter and sugars, eggs and pumpkin

In a large mixer, cream together butter, sugars, eggs, and pumpkin.

stir in dry ingredients

Stir in dry ingredients, one-third at a time, until well combined.

add vanilla and chocolate chips

Add vanilla and chocolate chips, stir.

Tip: Batter will be very soft, however, chilling this dough is not necessary. Cookies will hold their shape during baking.

Drop by spoonfuls onto lightly greased cookie sheet. 

Bake at 400 degrees for 10-12 minutes.

Drizzle with icing if desired.

Editor's Note: You could easily substitute other ingredients for the chocolate chips, I would suggest raisins or chopped walnuts, or a combination of all three. The original recipe does not call for icing but I thought it would be pretty for the holidays. They are delicious either way and taste similar to pumpkin bread. YUM!!!

These cookies are very sweet. They are crisp on the outside and chewy on the inside. And very good with a glass of milk!

Ingredients:

3/4 c. shortening
1 c. firmly packed brown sugar
1/2 c. white sugar
1/2 c. molasses
2 tsp. vinegar 
3 T. water, 3 T. oil, 2 tsp. baking powder, mixed together
1 1/4 c. flour
1 T. ground ginger
1 1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves
2 3/4 c. quick-cooking oats
1 1/2 c. raisins

Note: We used apple cider vinegar.

Directions:

Preheat oven to 350 degrees. Grease cookie sheet.

Ingredients:

1 c. butter (not margarine), softened
1/2 c. brown sugar
1 egg
3/4 c. molasses
3 c. all-purpose flour
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. ground cloves
1 tsp. nutmeg
Small amount of sugar for coating cookies

Directions:

In a large bowl, cream together the butter, brown sugar and egg until well blended. Stir in the molasses. Combine the flour, baking soda and spices; stir into the molasses mixture. Cover the dough and chill for at least 1 hour. Preheat oven to 350 degrees. Grease cookie sheets. Roll the dough into walnut-sized balls and roll in sugar to coat. Place the cookies 2-inches apart onto the prepared cookie sheet. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Ingredients:

1 c. butter or margarine
1 c. sugar
2 eggs
1 c. molasses mixed with 1 t. soda
4 c. flour
2 t. ginger
1 t. cinnamon
1/2 t. salt
1 c. buttermilk mixed with 1 t. soda

Directions:

Cream shortening and sugar until fluffy. Add eggs and molasses-soda mixture. Sift dry ingredients together; add alternately with buttermilk-soda mixture. Drop by teaspoonfuls on greased baking sheet. Bake at 375 degrees till set. Yields 6 doz.

Grandmother’s Molasses Cookies

Ingredients:

1 c. shortening
1 c. sugar
1 egg
1 c. dark molasses
1 c. boiling water
1 t. salt
1 t. ginger
1 t. cinnamon
1 t. soda
4 c. flour

Directions:

Cream shortening and sugar together. Add egg and beat well. Add molasses; measure hot water in same cup and add to creamed mixture. Sift dry ingredients together. Stir till smooth. Add enough flour to make a soft dough - more if too sticky. Roll out on a floured board. Sprinkle with sugar; cut into shapes. Bake on a greased cookie sheet at 350 degrees till set. Yields 5 dozen.
