My mother gave this recipe to me. It doesn't call for any eggs. Some zucchini have more moisture than others. It doesn't matter, just use two cups of grated zucchini.

Editor's Note: These brownies are moist and delicious, and healthier too!

Ingredients:

2 c. flour
1 1/4 c. sugar
1 tsp. salt
1 1/2 tsp. baking soda
1/4 c. cocoa
1/2 c. nuts
1/2 c. oil
2 tsp. vanilla
2 c. finely grated zucchini

Directions:

flour, sugar, salt, soda, and cocoa in bowl

Mix flour, sugar, salt, baking soda, cocoa.

pecans chopped on cutting board

Add chopped nuts.

fresh zucchini cut in half

zucchini grated in measuring cup

Add oil, vanilla, and zucchini. Mix by hand until moistened. Pour into a well greased 9x13-inch pan.

Editor's Note: We grated the zucchini with a food processor. Worked great!

pan of baked brownies

Bake at 350 degrees for 25 minutes. Cool before frosting.

Frosting…

Ingredients:

1 c. sugar
4 T. milk
4 T. margarine
1/3 c. chocolate chips

Directions:

pot of sugar, milk, and butter cooking on stove

Boil sugar, milk and margarine for 30 seconds.

This is a lovely holiday cookie from an old gourmet magazine recipe that is just fabulous. You can substitute different varieties of chips and nuts for amazing combinations (mint chocolate chips are also delicious). These cookies are surprisingly easy to make!

Ingredients:

2 c. all-purpose flour
1/2 c. cocoa powder
1 tsp. baking soda
1 tsp. salt
3/4 stick unsalted butter, softened (6 T.)
1 c. sugar
2 large eggs
1 c. walnuts, chopped
3/4 c. chocolate chips

Directions:

Preheat oven to 350 degrees, butter and flour large baking sheet. In bowl, whisk together flour, cocoa, baking soda, and salt. In another bowl with an electric mixer, beat butter and sugar until light and fluffy. Add eggs and beat until combined well. Stir in flour mixture to form stiff dough. Stir in walnuts and chocolate chips.

On prepared baking sheet with floured hands, form dough into two slightly flattened logs, each 12 inches long and two inches wide. Bake logs 32-35 minutes (depending on desired crispness) or until slightly firm to the touch. Cool biscotti on baking sheets for 5 minutes.

On cutting board, cut biscotti diagonally into 3/4 inch slices with serrated knife. Arrange biscotti cut sides down on baking sheet and bake 8-10 more minutes (depending on desired crispness.) Cool on rack. Keep biscotti in airtight container 1 week or keep frozen one month.

If you want triple chocolate biscotti, cookies can be drizzled or dipped in a good dark chocolate. I would recommend el ray baking chocolate 58.5 or 61%, Callebaut's semi-sweet or any Scharffenberger's semi-sweet or dark chocolate. This biscotti is also wonderful with Dutch process cocoa.

Enjoy!

Yield: 2 - 3 Dozen Cookies

Ingredients:

1/2 c. margarine, or butter
2 c. sugar
1/4 c. cocoa
1/4 c. chocolate chips
1/2 c. milk
2 tsp. vanilla
1/4 c. peanut butter
3 c. old-fashioned oats

Instructions:

Measure 1/4 c. cocoa first, just because it smells so good! ;o)

In a medium size pot, add sugar, butter, cocoa, chocolate chips, and milk.

Stir and boil for 3 minutes, over medium-high heat.

Remove from heat, add vanilla.

Stir in peanut butter and oats.

Continue stirring till cookie mixture is combined well.

Drop cookies by tablespoon onto wax paper to set.

Hint: If you're in a hurry... slide cookies with wax paper onto a flat tray or baking sheet and place in the fridge to chill. They will set very quickly this way. I'm not sure if you need to store these cookies in the fridge, but we did. They are, um, I mean, they WERE delicious!

Enjoy!

Hedge Hog Chocolate Cookies

Hedge Hog Chocolate Cookies

Category: Desserts, Bars
Prep Time: 15 Minutes
Level: Baking Experience Helpful
Yield: 24 Bars

Print Recipe...

Ingredients:

100g (7/8 c.) Milo powder (similar to Ovaltine® or Nesquick®)
225g (2 c.) cocoa powder
125ml (1/2 c.) water
125g (1/2 c.) butter
200g (1 3/4 c.) milk powder plus 4 T. water (combine to make paste to avoid lumping)
80g (3/8 c.) brown sugar
4 eggs, lightly beaten
1 tsp. vanilla extract
1 tsp. Kahlua
1/2 tsp. salt
200 plain Marie tea biscuit, broken into pieces

Directions:

Bring water to boil and add Milo powder and cocoa powder. Keep stirring and add butter followed by milk powder paste. Continue stirring and add brown sugar. Slowly add in eggs. Keep stirring for 5 minutes until eggs are almost grainy. Turn off the heat and remove. Add vanilla extract, Kahlua and salt. Fold in the broken Marie tea biscuits. Cool and then cut.

Editor's Note: Marie biscuits are sweet, light and fluffy tea biscuits with a hint of vanilla. They may be available in the special cookie section or international foods of your local grocery store. Goya is one brand to try here in the U.S., though they use the name Maria instead of Marie. Also, Mary did not include in her directions what to do with the cookie mixture to cool. No problem! We can safely assume to put the mixture either onto a baking sheet or dish. When mixture is cooled, then cut into bars. Sounds delicious, Mary!

Enjoy!
