Rocky Road Brownies

Ingredients:

1 chocolate chips
1 1/4 c. mini marshmallows
1/2 c. chopped nuts
1/2 c. butter
1 c. sugar
1 tsp. vanilla
2 eggs
1/2 c. flour
1/3 c. cocoa
1/2 tsp. baking powder
1/2 tsp. salt

Directions:

Grease a 9-inch square pan. Heat oven to 350. Stir together chips, marshmallows and nuts, set aside. Melt butter in large bowl. Add sugar, vanilla and eggs. Mix well. Spread into pan. Bake 22 minutes. Sprinkle chip mixture over top. Bake for 5 minutes or until marshmallows are golden. Cool.

A member requested this recipe and when I discovered I had it my own personal collection, I couldn't believe it. Of course, I had to try them first. They are delicious!

Ingredients:

2/3 c. vegetable shortening
1 1/2 c. light brown sugar, packed
1 T. water
1 tsp. vanilla extract
2 large eggs
1 1/2 c. all-purpose flour
1/3 c. unsweetened cocoa powder
1/4 tsp. baking soda
1/2 tsp. salt
1 (12-ounce) package semi-sweet chocolate chips

Instructions:

Preheat oven to 375 degrees. 


add ingredients

In a large mixing bowl, combine shortening, sugar, water and vanilla. Blend well. 


add eggs to cookie mixture

Add eggs and beat just until combined. 


add dry ingredients

In a separate bowl, combine flour, cocoa, baking soda and salt. Gradually add dry ingredients to shortening mixture on low speed.

Add chocolate chips.


bake cookie dough

Drop brownie cookie dough by rounded tablespoonfuls onto ungreased baking sheet. Bake for 8-9 minutes or until cookies are set, (they will be soft, but not gooey). Remove cookies from oven and cool on baking sheet for a few minutes, then move to cooling racks.

Brownies…

Ingredients:

4 ounces unsweetened chocolate
2/3 c. butter, room temperature
2 c. granulated sugar
4 eggs
1 tsp. vanilla extract
1/2 c. Kahlua
1 1/4 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt

Instructions:

Preheat oven to 350 degrees. Grease a 9x13-inch baking pan. In a medium saucepan over low heat, melt the chocolate and butter together. Remove pan from heat and mix in sugar, eggs, vanilla and Kahlua. Stir in flour, baking powder and salt. Spread in prepared pan. Bake at 350 degrees for 25 to 30 minutes or until batter starts to pull away from sides of pan. Cool.

Frosting…

Ingredients:

2 T. Kahlua
1 tsp. instant coffee
1/2 c. butter, room temperature
2 c. confectioners’ sugar
1/2 tsp. vanilla extract
2 to 3 tsp. milk

Instructions:

In a small bowl, mix Kahlua with instant coffee, stirring until coffee is dissolved. In a medium bowl, cream butter, confectioners’ sugar and vanilla together. Add coffee mixture and beat until well blended. Add milk to desired consistency. Spread frosting over cooled brownies.

Topping…

Ingredients:

1 ounce semi-sweet chocolate
1 T. butter

Instructions:

In a small saucepan, melt chocolate and butter together. Cool slightly and drizzle topping over frosting. Cool until chocolate is set. Cut into bars. Yields 24 to 32 bars.
