These sweet ghost cookies are made with vanilla almond bark (white melting candy) and are so very cute for Halloween! 

Editor's Note: For this recipe we used Nutter Butter peanut butter sandwich cookies. If you don't like peanut butter, or are serving guests that may have peanut allergies, you can use other types of oval shaped cookies such as Milano's (chocolate filled) or Vienna Fingers (vanilla filled) sandwich cookies.

Ingredients:

Nutter Butter cookies
Vanilla almond bark, white chocolate, or vanilla melting candy
Semi-sweet mini chocolate chips

Directions:

Melt vanilla bark in microwave for 30 seconds, then 15 second intervals, stirring each time.

Dip cookies in melted coating, or spread on cookie with a knife or fork.

While coating is still soft, add two mini chocolate chips for eyes.

Allow coated cookies to cool on parchment or waxed paper.

These cookie bars are made with oatmeal, peanut butter, and chocolate chips. The base is salty and sweet, and the topping is very sweet! Not sure why they are called candy bar cookies though. They do not taste like any candy bars we've ever had. Maybe it's because the peanut butter chocolate coating tastes like candy (similar to Reese's), and, they are BAR COOKIES. Put them together and what do you have? Candy Bar Cookies! :o)


Ingredients:

1 c. brown sugar, firmly packed
1/2 c. butter, softened
1/2 c. light corn syrup
3 tsp. vanilla
1 tsp. salt
4 c. quick-cooking oats
1/2 c. peanut butter
1 c. semi-sweet chocolate chips

Instructions:

By hand or with electric mixer on medium speed, combine brown sugar and softened butter until fluffy.

Add corn syrup, vanilla, and salt. Stir in oats. Spread evenly in greased 9x13x2 inch baking pan. Bake at 350 degrees for 15 minutes.

Melt peanut butter and chocolate chips over low heat, stirring constantly. 

Editor's Note: We melted the peanut butter and chocolate chips in the microwave, on high for 45 seconds, stirring every 15 seconds.

If you've always wanted to make these sweet jar gifts for Christmas but didn't know how, here are step by step directions for how to make "cookie mix in a jar" gifts! 's Who wouldn't LOVE to be on the receiving end of this gift?!

Ingredients:

3/4 c. sugar
1/4 c. packed brown sugar
1 3/4 c. flour mixed with 1 tsp. baking powder and 1/2 tsp. baking soda
8 large Reese's peanut butter cups cut into 1/2 inch pieces (wrap in plastic wrap)

Instructions:

Place white sugar in jar. Next is the brown sugar, measure and then fluff with fork as you add this layer so it won't be in one clump. Press down slightly.

Mix flour, baking powder and soda together, then add to jar using a large spoon or small measuring cup. The 1/4 measure is perfect for filling the jar.

If you have not done so already, cut peanut butter cups into small pieces.

If candy pieces are sticky use a pastry scraper or spatula to pick them up.

Now place the wrapped peanut butter cup pieces on top and don't worry about keeping the plastic wrap closed. Bunch it up at the top and it will stay together when you place the lid on.

Reese's ® Peanut Butter Cup Cookies

Directions: Remove candy and set aside. Empty cookie mix into large mixing bowl, stir to combine. Add 3/4 cup softened butter, 2 eggs slightly beaten, and 1 tsp. vanilla. Mix until completely blended. Stir in candy pieces. Drop dough by teaspoonfuls 2 inches apart on a lightly greased baking sheet. Bake at 375 degrees for 10-12 minutes or until edges are lightly browned. Cool 2 minutes on baking sheet then cool on wire racks. Enjoy!

Ingredients:

1 c. peanut butter
1/2 c. butter
1 c. brown sugar
2 eggs
1 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1 pound bag of Hershey's ® chocolate kisses
Powdered sugar

Directions:

Cream peanut butter, butter, and sugar. Beat in eggs. Combine flour, baking powder, and cinnamon, and add to mixture gradually. Chill dough for 30 minutes. 

Wrap one tsp. dough around each chocolate kiss. Place on cookie sheet and bake at 350 degrees for 10 - 12 minutes. Roll in powdered sugar.

Ingredients:

1/2 c. butter-flavored shortening
1/2 c. brown sugar, packed
1 egg
1 1/2 teaspoons vanilla extract
1 14-ounce can sweetened condensed milk
3 T. creamy peanut butter
1 1/2 c. all-purpose flour
1 c. graham cracker crumbs
1 tsp. baking soda
1 tsp. salt
2 c. plain M&M's® candy
1/2 c. chopped pecans

Directions:

In a large mixing bowl, cream shortening and brown sugar.

Then beat in egg.

Add vanilla and milk. Next, blend in peanut butter.

Combine dry ingredients and add to the creamed mixture.

Stir in the M&M's® and nuts.

Drop by teaspoonfuls 1" apart on ungreased baking sheets.

Bake at 350 degrees for 10-12 minutes or until golden brown. Cool on wire racks.

Ingredients:

1/2 c. margarine, or butter
2 c. sugar 
1/4 c. cocoa
1/4 c. chocolate chips
1/2 c. milk
2 tsp. vanilla
1/4 c. peanut butter
3 c. old-fashioned oats

Instructions:



Measure 1/4 c. cocoa first, just because it smells so good! ;o)



In a medium size pot, add sugar, butter, cocoa, chocolate chips, and milk. 



Stir and boil for 3 minutes, over medium-high heat.



Remove from heat, add vanilla. 



Stir in peanut butter and oats. 



Continue stirring till cookie mixture is combined well.



Drop cookies by tablespoon onto wax paper to set.

Hint: If you're in a hurry... slide cookies with wax paper onto a flat tray or baking sheet and place in the fridge to chill. They will set very quickly this way. I'm not sure if you need to store these cookies in the fridge, but we did. They are, um, I mean, they WERE delicious!

I usually double this recipe. My family loves the size of these cookies. It feels like you’ve really got a treat in your hand. Sometimes I drizzle them with chocolate.

Ingredients:

1/2 c. peanut butter, creamy or chunky
1/2 c. butter or butter flavored shortening
1/2 c. brown sugar
1/2 c. granulated sugar
1 egg
1/2 tsp. vanilla
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/4 tsp. salt

Instructions:

Cream together peanut butter, butter, brown sugar and granulated sugar. Add remaining ingredients and mix well. Scoop out a good sized piece of dough about the size of a big walnut. Roll in granulated sugar and place on ungreased cookie sheet. Depending on size of sheet you can get six to eight cookies on a sheet. Press with fork tines. Bake at 350 degrees for 8 1/2 to 9 minutes. Cool.

Chocolate Drizzle…

1/2 c. semi-sweet chocolate chips
Scant tsp. shortening

Instructions: 

Microwave for one minute or so, stirring half way. Drizzle onto cooled cookies with spoon or plastic sandwich bag with a hole snipped from one corner.

Ingredients:

1 c. peanut butter
1 c. Splenda® 
1 egg

Directions:

Preheat oven to 350 degrees. Line baking sheet with parchment paper. Combine the peanut butter, sugar and egg. Mix until smooth. Drop spoonfuls of dough onto prepared baking sheet. Press with a sugared fork to make criss-crosses. Bake for 6 to 8 minutes. These cookies are best when still soft and just barely brown on the bottoms.

Ingredients: 

Cookies…

1 c. butter, room temperature
1 c. creamy peanut butter
1 c. sugar
1 c. packed brown sugar
1 tsp. vanilla extract
3 eggs
4 c. all-purpose flour
2 tsp. baking soda
1/4 tsp. salt

Filling...

1/2 c. creamy peanut butter
3 c. confectioners' sugar
1 tsp. vanilla extract
5-6 T. milk

Directions:

In a mixing bowl, cream butter, peanut butter, and sugars. Add vanilla. Add eggs one at a time, beating well after each addition. Mix flour, baking soda and salt in a separate bowl. Add to mixture in mixing bowl. Shape into 1-inch balls and place 2 inches apart on ungreased baking sheets. Flatten with tines of a fork. Bake at 375 degrees for 5 to 6 minutes (don't over bake). Cool on wire racks. In a mixing bowl, combine and mix the filling ingredients until smooth. Spread on half of the cookies and top each with another cookie.

Ingredients:

1 jar (18 ounces) peanut butter
1 package (16 ounces ) graham crackers broken into rectangles
1 1/2 pounds chocolate almond bark

Directions:

Spread a rounded teaspoonful of peanut butter on one side of half of the graham crackers. Top with remaining crackers. In a heavy saucepan over low heat, melt candy coating and stir until smooth. Dip cookies in coating to completely cover; allow excess to drip off. Place on waxed paper-lined baking sheet; let stand until firm. Store in an airtight container in a cool dry place. Yield 5 dozen.These are very good, They taste like a Butterfinger or a Clark Bar. They have been a favorite in my family every since I have made them.

1 stick margarine
2 1/2 c. old-fashioned oats
1/2 c. cocoa

Directions:

Bring to boil sugar, margarine, cocoa, and milk. Boil for 2 minutes. Remove from heat; add peanut butter, oatmeal, and vanilla. Drop by tablespoonful onto wax paper. Allow to set until firm.

I was going through my book of favorite recipes and ran across this one. I can still remember my daughter and me fixing them when she was still home. I hope you enjoy them as much as our family does.

Ingredients:

2 c. sugar
1/2 c. milk
1/2 c. butter
1/3 c. cocoa
1/2 tsp. salt
1 tsp. vanilla
1 c. peanut butter (I like extra crunchy)
3 c. oats (quick or regular)

Directions:

Combine sugar, milk, butter, cocoa and salt in a heavy 3 quart pot. Stir. Bring to a full boil and boil for 1 minute. Remove from heat. Add vanilla and peanut butter and stir until smooth. Add oatmeal and mix well. Cool slightly until mixture holds shape. Drop by teaspoon onto waxed paper. Cool.
