Category: Desserts, Cookies, Holiday, Drop
Prep Time: 15 Minutes
Level: Easy to Bake
Yield: 2 Dozen Cookies

Print Recipe...

Ingredients:

4-1/2 cups flour
4 tsp. ground ginger
2 tsp. baking soda
1-1/2 tsp. ground cinnamon
1 tsp. ground cloves
1/4 tsp. salt
1-1/2 cups shortening*
2 cups granulated sugar
2 eggs
1/2 cup molasses
3/4 cup coarse or granulated sugar

Directions:

Heat oven to 350 degrees. Stir flour, ginger, baking soda, cinnamon, cloves and salt in medium bowl; set aside.

Beat shortening in a large bowl with electric mixer on medium speed for 30 seconds. Gradually add 2 cups sugar, beating until fluffy. Add eggs and molasses; beat until well blended.

Beat in as much flour mixture as possible with mixer. Stir in any remaining flour mixture with wooden spoon. Shape dough into 2-inch balls with 1/4-cup ice cream scoop. Roll in 3/4-cup sugar.

Place 2-1/2 inches apart on ungreased cookie sheets. Bake 12 to 14 minutes or until lightly browned and puffed. (Do not overbake or cookies will not be chewy.) Cool for 2 minutes; remove from cookie sheets. Cool on wire racks. Makes about 25 cookies.

*Note: to create the chewy texture, be sure to make these cookies with shortening, not butter or margarine.

Enjoy!

My kids love these cookies. We make them in the fall, especially around Thanksgiving and Halloween, but they would be just as good on a rainy summer day. Using milk chocolate chips really give them a wonderful flavor with the pumpkin and other spices. They have the same density as hermits and just as good!

Ingredients:

Cookies...

1/2 pound butter (2 sticks)
2 c. brown sugar, packed
1/2 c. white sugar
4 eggs
2 c. mashed cooked pumpkin
1 tsp. vanilla extract
2 c. chocolate chips (milk chocolate)
2 1/2 c. all-purpose flour
1 tsp. salt
2 tsp. baking soda
4 tsp. cinnamon
1/2 -1 tsp. cloves
1 tsp. nutmeg
1 tsp. ginger

Icing... (if desired, they are great with or without)

3 T. confectioners' sugar
1 tsp. hot water (more or less as needed; for desired consistency)

Directions:

sifting dry ingredients

Sift together flour, salt, baking soda, cinnamon, cloves, nutmeg, and ginger. Set aside.

cream together butter and sugars, eggs and pumpkin

In a large mixer, cream together butter, sugars, eggs, and pumpkin.

canned or fresh pumpkin puree

stir in dry ingredients

Stir in dry ingredients, one-third at a time, until well combined.

add vanilla and chocolate chips

Add vanilla and chocolate chips, stir.

Tip: Batter will be very soft, however, chilling this dough is not necessary. Cookies will hold their shape during baking.

drop cookies onto baking sheet

Drop by spoonfuls onto lightly greased cookie sheet.

Bake at 400 degrees for 10-12 minutes.

cool cookies on rack

Cool cookies on rack.

drizzle cookies with icing

Drizzle with icing if desired.

Editor's Note: You could easily substitute other ingredients for the chocolate chips, I would suggest raisins or chopped walnuts, or a combination of all three. The original recipe does not call for icing but I thought it would be pretty for the holidays. They are delicious either way and taste similar to pumpkin bread. YUM!!!

Enjoy!

These cookies remind us of Snickerdoodles, just more cake-like. Grandma said they remind her of some tea cookies her mom used to make, but these are a bit thicker. Her mom would also make a frosting and make them into cream filled sandwich cookies. Sounds like a great idea!

Ingredients:

1/2 c. butter or margarine
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
3 c. sifted flour
1 c. sour cream
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
Cinnamon sugar

Directions:

butter and sugar mixed together in bowl

Cream butter or margarine with sugar until well blended. Beat in eggs and  vanilla.

Add sifted flour, alternately with sour cream, salt, baking soda, and baking powder.

cookie dough in bowl

Blend to make a thick batter.

dropped cookie dough on baking sheet

Drop by rounded tablespoonfuls, 4 inches apart on greased cookie sheet. Sprinkle with cinnamon-sugar and bake at 400 degrees for 9-10 minutes or until lightly golden around the edges.

This recipe was requested and shared by our Cookie Club members. The only thing missing is chocolate chips, which we feel would be perfectly fine to add!

Ingredients:

1 c. shortening
2 1/2 c. brown sugar
3 eggs
1 tsp. baking soda
2 T. boiling water
3 1/3 c. all-purpose flour
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 c. raisins
1 c. chopped nuts, pecans or walnuts

Directions:

Editor's Note: Soak raisins for 10 minutes in cup of water, then drain before adding to cookie dough.

Cream shortening, sugar, and eggs. Dissolve baking soda in water and add to creamed mixture. Add dry ingredients, raisins, and chopped nuts. Drop cookies by spoonfuls onto ungreased baking sheet. Bake at 375 degrees for 10-12 minutes.

This recipe can also be made into cupcakes, now isn't that wild?!

For cupcakes, bake at 350 degrees for 20 - 25 minutes. (And let us know how they turn out!)

Enjoy!

Here's a good cookie to make ahead of time for the holidays. This recipe was given to me by my grandmother.

Ingredients

2 eggs
l cup sugar
1/3 cup honey
3/4 cup ground nuts
2 l/2 cups flour
l/4 tsp. baking soda
1/4 tsp. salt
l/2 tsp. cinnamon
l/4 tsp. allspice
l/2 tsp. cloves
6 tsp. orange peel and 2 tsp. lemon peel
(or you can use mixed candied fruit in place of orange and lemon peel)

Directions:

Beat eggs and sugar till fluffy. Add honey and mix well, then add nuts (almonds or walnuts). In a separate bowl, sift dry ingredients together. Add orange and lemon peel, or candied fruit. Add flour mixture to egg mixture and beat well.

Chill dough for several hours or overnight. Roll out to about l/4 inch thick or thinner. Cut out cookies with cutters of the season. I add a slivered almond and green and red candied cherries on the top before baking at 350 degrees for about 20 minutes. Do Not let them get too brown.

If they are too crisp, put them in a plastic bag and add a bread crust. They will become softer and chewy. They will keep for weeks - Not refrigerated.

Enjoy!

1/4 tsp. salt
1 egg
1/2 c. sugar
1/2 tsp. vanilla
1/2 tsp. baking soda
1/3 c. brown sugar
1 and 1/2 c. flour
1/4 tsp. cream of tartar

Topping...

2 T. sugar
1 tsp. cinnamon

Directions:

In a large bowl, cream together butter and sugars with an electric mixer on high speed. Add the egg and vanilla and beat until smooth. In another bowl, combine the flour, salt, baking soda, and cream of tartar. Pour the dry ingredients into the wet and mix well. Preheat oven to 300 degrees while you let the dough chill for 30-60 minutes in the refrigerator. In a small bowl combine the sugar and cinnamon for topping.

Take about 2 and 1/2 tablespoons of the dough and roll it into a ball. Roll this dough into the cinnamon/sugar mixture and press it onto an ungreased cookie sheet. Repeat for remaining cookies. Bake the cookies for 12-14 minutes.

The cookies may seem undercooked, but will continue to develop after removed from the oven. When the cookies have cooled, they should be soft and chewy in the middle.

Yield: 75 Cookies

Ingredients:

1/2 c. vegetable shortening
1/2 c. butter
1 1/2 c. sugar
3 eggs
1/2 tsp. baking soda (dissolved in 2 tsp. water)
3 c. flour
1 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
2 c. raisins

Directions:

Cream Crisco, butter and sugar together. Add beaten eggs and mix well. Dissolve soda in water and add. Mix and sift flour and spices then add to the creamed mixture. Add raisins. Drop (Drop, don’t roll) by small tablespoonfuls onto a greased baking sheet (or use parchment paper). Bake at 335 degrees for 12-18 minutes. Makes 75 or more.

I remember Grammy always poured boiling water over the raisins and let them sit for a few minutes before adding to batter. This helped to plump them up. Be sure to drain well so as not to add extra water to the batter. Dad says that Grammy also put a dollop of bacon fat in the recipe. She kept the fat in a jar by the stove. Also, don’t handle the dough too much or it will result in a rock hard cookie.

This is an old German cookie, made easier. These are a really good, hard cookie. Most people a few years back would toss a handful into the coffee and when they sunk to the bottom of the cup, you knew they were ready to eat. I like them to crunch on. I have held the dough for a week and baked them. I store them in a covered tin or in a glass jar with a lid. These freeze well. I make them after Thanksgiving.

Ingredients:

2 c. sugar
1 egg
1/2 c. cream
1/2 c. molasses
1 T. butter
1/2 tsp. salt
1 tsp. allspice
1 tsp. cinnamon
1/4 tsp. cloves
2 tsp. baking powder
3 1/2 c. flour
2 tsp. anise seed or 1/2 tsp. anise oil (I buy the anise oil in the pharmacy in Dillon's grocery store. Walmart may have it too.)

Directions:

Mix together the sugar, egg, cream, molasses and butter. Set aside. Combine remaining ingredients. Add dry ingredients to creamed mixture. Chill for 1 hour. Take 1/4 of the mixture at a time and roll into long small rolls (about as big around as a cigar, or as long as a pencil) on lightly floured surface. Cut into small pieces 3/4-inch long or shorter. These do not spread. Bake on cookie sheet with parchment paper for 15 minutes at 350 degrees.
